Tests were carried out to assess the suitability of a halogen moisture analyser for rapid moisture determination in sugars. A universal halogen drying method using a standard drying programme at 124°C with a cut-off mode of 3 was found applicable to all sugars, and the method gave results comparable to those of the reference oven drying method, with short analysis time ranging from two to twelve minutes depending on moisture content of the sugar. At high moisture levels (1.5-4.0 per cent) the oven method gave more precise results than the halogen method (about 1 per cent CV compared to 2 per cent CV), in the medium moisture range (0.20-0.60 per cent), the oven method is less precise (up to 10 per cent CV compared to 2-4 per cent CV), and at low moisture level ((less than 0.1 per cent), the oven method is more precise (up to 10 percent CV compared to 15 per cent CV). The traditional oven method gave higher moisture results, when compared with the halogen drying with a filter cover, to prevent sample decomposition by heat, and with the vacuum oven method. | |
