Abstract (AB)This paper develops an optimum cooling concept for pure sucrose solutions and extend it to impure sucrose solutions. The applicability of such a concept to individual crystallization is discussed. Results of an optimum cooling programme using a crystallization model are presented for a range of pan drop conditions, and are compared with typical industrial cooling practices. Limitations on implementation of the optimum cooling policy are also discussed.
