Abstract (AB)Dry matter content and its components, sucrose, fibre and reducing sugars were compared at 3 dates of harvest in 3 varieties for canes of 64 weeks of age grown in 4 contrasting environments. The evolutions of dry matter and its components were also followed during the 16 weeks preceding each harvest. For a given variety and date of harvest partitioning of dry matter was not influenced by the environment, but it was affected by date of harvest and variety. Increases in sucrose per cent fresh weight have been explained by an increase in dry matter content, partitioning of dry matter in favour of sucrsoe and conversion of reducing sugars into sucrose; there was no evidence of a desiccation effect. The varieties have also shown marked differences in ripening behaviour. The effect of age as a factor influencing ripening appears to be negligible in the present study.
