Abstract (AB)It is generally believed that potatoes grown in Mauritius are not suitable for processing and that this limits consumption. As a first step in research for improving the processing quality of potato, it was proposed to assess the processing quality of the varieties recommended for commercial plantations. Tubers were produced in three sites. The following aspects of quality were assessed on freshly harvested tubers: tuber morphology, that is size, shape, colour and eye depth and other characteristics, that is, specific gravity and reducing sugar content. Their chipping and crisping quality were also evaluated after frying. Varieties BR63-76 and BR69-84 were found to be unsuitable for processing as the tubers were small and had deep eyes. Variety Exodus with a specific gravity of about 1.083 may be recommended for crisps, and variety Spunta in spite of its relatively lower specific gravity is suitable for chips. Variety Up-to-date could be a acceptable substitute for both crisps and chips.
